Bananas Muffins

At home, when bananas are over ripe, we put them in the freezer. When we have enough bananas, we then make muffins. This way, we do not loose our bananas!

Ingredients:

  • 80 ml butter
  • 200 ml brown sugar
  • 300 ml flour
  • 2 ml baking soda
  • 5 ml baking powder
  • 1 egg
  • 1 ml salt
  • 200 ml very ripe bananas puréed
  • 5 ml vanilla
  • 50 ml milk

Method:

  • Cream the butter with brown sugar and the eggs until the batter is smooth
  • Mix in the milk, bananas and vanilla
  • Combine the flour, salt, baking soda and baking powder together and add to the banana batter
  • Mix well and spoon the batter in muffin pan, lightly greased
  • Bake at 3500 F for about 25 minutes
