At home, when bananas are over ripe, we put them in the freezer. When we have enough bananas, we then make muffins. This way, we do not loose our bananas!
Ingredients:
- 80 ml butter
- 200 ml brown sugar
- 300 ml flour
- 2 ml baking soda
- 5 ml baking powder
- 1 egg
- 1 ml salt
- 200 ml very ripe bananas puréed
- 5 ml vanilla
- 50 ml milk
Method:
- Cream the butter with brown sugar and the eggs until the batter is smooth
- Mix in the milk, bananas and vanilla
- Combine the flour, salt, baking soda and baking powder together and add to the banana batter
- Mix well and spoon the batter in muffin pan, lightly greased
- Bake at 3500 F for about 25 minutes
